Spring Salad

Spring is in the air! And that means fresh vegetables and fruits, two of our family’s favorites.  A great way to kick out the winter and kick start spring is to create a Spring Salad, packed with flavors and a spring fresh punch. I recently saw this version of spring salad over at Ruth Simon’s GraceLaced which incorporated asparagus and strawberries. I couldn’t wait to give it a try. And since then, this easy salad’s been our latest favorite.

  • organic spring mix
  • organic baby spinach
  • fresh strawberries, hulled and sliced
  • trimmed fresh asparagus, steamed until tender but crisp (about 8-10 minutes), then sliced diagonally
  • red onions, thinly sliced
  • cucumbers, thinly sliced
  • crumbled feta cheese
  • sliced almonds
  • Raspberry Vinaigrette, Balsamic Vinegar + Oil, Ken’s Lite Raspberry Walnut Vinaigrette or my favorite Organic White Balsamic Citrus Basil

Toss altogether. Enjoy!

Here’s what we’ve been reading from the Bible since last week. I hope you’ll find time to read the account of Jesus’ death and resurrection with your family. Looking for hands-on lessons to reinforce your Easter story? Read Make Your Own Resurrection Eggs and Stained Glass Cross Craft for Kids.

 

I. Read Mark 14:32-50

Jesus’ Arrest in the Garden

Truths:

Jesus knew exactly what was going to happen, but He wanted to obey and do what God the Father wanted Him to do.

 

II. Read Mark 14:53-15:15

Jesus’ Trial

Truths:

Jesus had done nothing wrong. God had a plan for Jesus to die so that we can be forgiven.

 

III. Read Mark 15:16-32

Jesus’ Crucifixion

Truths:

The people mocked Him and the soldiers hurt Him. Jesus could have gotten off the cross if He wanted to, but He wanted to do the will of His Father.

 

IV. Read Mark 15:33-47

Jesus’ Death and Burial

Truths:

Jesus’ friends wrapped His dead body, and laid it in a tomb. Jesus died because He loved you and me. With Him dying on the cross, the punishment for our sins are taken away.

 

V. Read Matthew 28:1-10

Jesus’ Resurrection

Truths:

Jesus died and God made Him come alive again. After He rose again, He appeared to many of his friends. Whoever believes in Him will live forever with Him.
